When breeders at Rijk Zwaan discovered a 'wild' pepper bursting with flavor, they immediately felt this was an opportunity to create something truly unique. The breeders set to work to breed the genetics into a commercial variety that not only had a distinctive taste but also an attractive color and recognizable shape. After several years of crossing varieties, the first commercial pepper was created: Mitayo. Further research into this variety confirmed that the breeders' gut feeling was right; consumers love the taste, and so do chefs.
Bursting flavors results in an award winning product
Tatayoyo, in its young existence, has shone in two contests. In 2021, the International Taste Quality Institute (ITQI) evaluated it, with chefs clearly favoring Tatayoyo, earning it the maximum three stars. One ITQI panel member praised its 'delicious taste with the perfect blend of sweetness and flavor.'
